Omelet

Heat oil in a wok or skillet over medium heat. In a medium bowl, whisk together eggs, fish sauce, pepper and ground pork. When oil is hot, pour in egg mixture. Fry until fully cooked, and golden on both sides.
Begin by heating the pan on low-medium heat.
In a bowl, mix eggs with milk.
(For every three eggs, use about a 1/4 cup of milk)
6 eggs=1/2 cup milk
9 eggs=3/4
12 eggs=1 cup, etc.

Add any seasoning you like, such as: salt, pepper, paprika, etc.
Pour the egg mixture in the pan, and swish it around so that a fine layer of egg sticks to the side.
Let it sit in the pan until the egg whites start to turn white.

When the egg is about 70% cooked through, it is time to swish the remaining liquid around.
Next, we are ready to add our toppings. This can be ANYTHING you like. Cheese is a good choice, as are meats, peppers, onion, tomato, and garlic.

After the omelet is done cooking, fold it in half, and slide it onto a plate.
